Pour 50ml Elders

Step 3

Add 75ml Prosecco

Top up with Soda Water

Garnish with fresh mint & lemon

Elderflower

To capture the full character of the blossom, we layer multiple elderflower extracts together to build depth and aroma, each made using hand-picked flowers.

 

We use a technique borrowed from the perfume industry to create a supercritical extract, which brings a vivid, expressive top note. Layered together, this creates a bright, unmistakable elderflower flavour with real depth.

Rhubarb

Rhubarb brings a gentle sharpness and leafy freshness that lifts and balances the floral notes of elderflower.

Its subtle tartness adds structure, preventing the sweetness from becoming overly rounded, while introducing a quiet complexity. A grounding note in our garden of flavour.

Apple

Local apples sourced from surplus produce form the base of our spirit - clean, crisp, and sustainable.

This foundation is lifted with a touch of cider, adding a subtle fermented note and a gentle complexity to the finish. Fresh, balanced, and layered from the ground up.
